Potential
impact of Sensory Sciences on product design
The
development of sensory sciences is encouraging important advances in the
knowledge of sensory preference mechanisms, the application of systematized
sensory analysis techniques and the generation of computational models for
sensory processing. Sensory Sciences acquire a high potential impact on product
design and production technologies and systems within industries manufacturing
high sensory profile products such as food, wine, fragrances, computers and
automotive, just to mention a few.
The 2002 experience
Some
years ago the idea of designing a sensory science symposium to provide
solutions to the scientific and technological needs of the sensory industry in
our country and within the international panorama, appeared as a significantly
complex task. Consequently the proposal of organizing a previous meeting, in
June 2002, aimed to assess the status of the sensory sciences within our
boundaries arose. The project would provide insights about the capacity of our
community of sensory scientists to generate their own research areas and to
probe their harmony with the powerful growing European sensory industry.
The
celebration of the I International Meeting on Sensory Sciences and Perception
[CS2002] made the existence of a promising research tissue clear, a network
capable of complementation and willing to coordinate. The CS2002 meeting
conclusions yielded the evidence of the need to gather and coordinate efforts
aimed to provide Sensory Sciences with a corpus or scientific principles
consistent with the development of new technologies, capable of increasing the
competence, leadership and creativeness of its industry.
The 2004 appointment
We have
made a first sep in this direction with the announcement of a the II Percepnet
Symposium to be held in 2004. As in its former edition, the meeting will once
again provide a unique opportunity to explore the latest boundaries in sensory
sciences, gathering in a trans-disciplinary space those leading researchers in
the sensory science community interested in the new sensory evaluation
challenges, with the purpose of achieving a fruitful transfer of knowledge and
a successful discussion forum.
The
symposium , covering several topics addressed to the interests and concerns of
participants from academic and industrial environments, has been particularly
designed to encourage the presentation of the most recent results and aid
effective discussion and exchange of experiences.
This
second edition of the Percepnet Symposium, entitled «Exploring New
Sensory Evaluation Frontiers», will broaden the scopes of the contents to
include the most recent field of scientific interest. The symposium will focus
on sensory evaluation through workshops covering scientific, industrial,
technological and cultural aspects, also providing an expert vision about its
new boundaries through oral presentations.
Ranging
from recent developments in sensory science methods and latest research on
physiological mechanisms of perception, to the transmission of sensory
information using new technologies and the influence of cultural diversity on
preference marketing.

The topics to be discussed
in the meeting will include different aspects of sensory evaluation and its
relationship with certain areas of increasing impact on sensory sciences:
scientific principles of sensory science, biological and technological senses
in sensory evaluation, sensory evaluation and sensory marketing, sensory
analysis and cultural diversity and Analysis of preferences and quality
control.
The 2nd Percepnet Symposium on Sensory Sciences is
organized by Rubes Editorial, publisher of Percepnet and sponsored by
Grup Freixenet, with the collaboration of outstanding experts conducting
research on Cognitive and Sensory Sciences and Food technology at the
Autonomous University of Barcelona, the Centre Européen des Sciences du Goût, the Politechnics University Of Catalonia, the University of California,
Davis and the University of Zaragoza. Percepnet will publish all the relevant information about this coming meeting
in the
following months.
